Who needs that kind of pressure! All you need is to allow yourself to enjoy food, fresh food, with as many of your senses as you can muster, and share the enthusiasm with your family.

Chocolate peanut butter no bake cookies take no time to make, are easy and require little ingredients. The kids can help you measure the ingredients, mix them and drop the mix onto the baking sheet. They’ll feel like pastry chefs!

Then store them in the fridge in a sealed plastic container with the cookies sitting between layers of wax paper. Right before delivery place them in a decorative tin box and include a creative gift message. Have your son bring a smile to grandma’s face with a box of these decadent cookies topped with a ribbon tied around it and a message inside like, “Hope your heart is filled with joy today just like this tin is filled with these delicious cookies I made for you. I’m thinking about you grandma!” Your daughter could deliver a gift wrapped tin box to her third grade teacher with a message such as, “You’ve helped me get good grades. Hope these cookies get a good grade too. Thanks Mrs. Carter for everything.”

You and the kids will have fun and Mrs. Carter and grandma will be filled with happiness. EASY MICROWAVED CURRIED CHICKEN WITH APPLES

2 tbsp butter
2 tsp curry powder
1 medium onion, chopped fine
2 cups peeled and finely chopped Granny Smith apples
1 can cream of chicken soup, undiluted
1/2 cup low-fat milk
1 1/2 lb boneless skinless chicken breast, cut into small cubes
1 can (4-oz) sliced mushrooms, drained
1 cup frozen peas
dash of paprika
Hot cooked brown rice, optional

Place the butter in a microwave-safe dish; cover and microwave on high 45 seconds or until melted. Stir the curry powder into the melted butter; add the onion and chopped apples. Stir mixture until apples are coated. Cover and microwave on high for 2 or 3 minutes until the apples are crisp tender, stirring once during cooking. Stir in the chicken soup, milk, chicken cubes and mushrooms. Cover and microwave on high until the chicken is no longer pink, approximately 10 minutes. Add the peas and sprinkle with the paprika; cover and cook another 3 minutes until the peas are tender. Serve over the hot cooked brown rice, if desired.

End your kitchen frustration.  Here are four easy cooking ideas the will help you get healthy easy recipes from the refrigerator to the table.

 

1)         Plan in advance.

Cooking is like anything else.  Plan your work and work your plan.  This is the best way to stay on time and on budget.  Put yourself together a weekly, or even monthly cooking book that you can use.  Break each page down into two sections – first, what you need to buy, second, how to put it together.  You can get everything on the counter in the morning and put the meal together in minutes when you get home.  If you use quick and easy recipes, you have even more time available.

2)                  Use your crock pot.

If you cook an entire month of easy dinner recipes in two days, all you have left on the day to day basis is about 20 minutes to heat the meal. Open the freezer in the morning.  Choose what looks good.  Put it together in under 30 minutes that afternoon.  The hard part has already been done.  Some people get overwhelmed at the thought of cooking 30 meals at one time, but it really isn’t that hard if you are organized about it.  We do it about six times a year.  Start with a week at a time if you want to take a slow start, but this is a great time saver on a daily basis and budget conscious on a monthly basis.

If you are searching for healthy meals that are quick and easy, yet you are tired of chicken, chicken, chicken, this recipe is for you! This beef recipe is quick, easy, and great for most anyone including diabetics. The glazed onions add just a slight sweet taste to compliment the mushrooms and beef. The balsamic vinegar enhances all the flavors. Add a tossed salad and some brown rice for a healthy meal in a matter of minutes.

MUSHROOM AND ONION BALSAMIC BEEF

2 large yellow onions, sliced

3 tsp olive or canola oil

1/2 tsp salt

5 tsp balsamic vinegar

1 cup sliced fresh mushrooms

1 lb top sirloin steak

1/4 tsp thyme

1/2 tsp fresh ground black pepper

1 green onion, thinly sliced for garnish, if desired

Slice the sirloin steak into 1/2-inch thick slices.

In a large nonstick skillet, over medium heat, cook onions with lid on skillet. Cook for 15 minutes, stirring frequently scraping the bottom of pan to release the browned bits.

Add two teaspoons of the olive or canola oil to the skillet along with half the salt. Stir well to mix. To deglaze the pan add three of the teaspoons of the balsamic vinegar, one teaspoon at a time, scraping the brown bits from the bottom of the pan. Adjust the heat to medium-low and add the mushrooms. Cook uncovered, stirring frequently, for about 5 minutes or until the mushrooms are soft. Remove from the pan and cover to keep warm.

Adjust the heat to medium-high, add the last teaspoon of oil and swirl pan to coat the bottom. Add the beef slices to the pan and sprinkle with thyme, black pepper, and remaining salt. Cook 5 to 6 minutes until browned and beef is cooked through. Remove from the heat, drizzle the remaining balsamic vinegar over the beef then add the vegetables back into the pan. Stir to combine well. Remove to serving platter and sprinkle with the green onion, if desired.

Don’t however try to attempt to boil eggs in the microwave as it might explode. Even reheating boiled eggs is a risk.

 

5 minute Chocolate Cake

Ever been back from a tired day at work, and craving for a slice of chocolate cake? Well good news for you, you don’t actually have to make the entire cake. This recipe has been a sensation over the internet, and it just takes about 5 minutes. Just mix together 4 tbsp of cake flour, 4 tbsp of sugar and 2 tbsp of cocoa or hot chocolate mix in a bowl or even a mug. Spoon in an egg. Stir in 3 tbsp of oil and 3 tbsp of milk, and mix well. Put in the microwave at High for 2 ½ to 3 minutes (depending on the wattage of your microwave). The cake will rise and might start popping out if you are using a mug, but don’t worry about it, it’s supposed to happen. When it has stopped rising, take it out, let it set and it’s ready to eat. It might not be the richest cake in the world, but it will be a quick chocolate fix.

This one is simple and yet tasty! Just slice one potato into slices about paper thin (if you have a mandoline this will make it easier). Pour 1 table spoon of vege oil into a produce bag. Put in the microwave until it has turned light brown (cooking time may vary according to the wattage, so keep an eye on it). Take it out and toss with salt or any of your favorite seasonings. It is perfect for a TV day in.

This is a favorite among those looking for a quick dinner. Put some pasta in a microwave friendly bowl and add water till it is just above the pasta. Put it in the microwave for 2 to 3 minutes or longer (until it gets al dente and springy). Take it out and drain the water, and pour in cold water to stop the cooking of the pasta. In a separate bowl, microwave a tablespoon of butter for 1 to 1 ½ minute. Take it out and pour in some milk (around ½ to 1 cup) and cheese (as much as you may like). Cook in microwave at high temperature for about 2 to 3 minutes, taking it out every 30 seconds or a minute to stir. Once the sauce is done, add the pasta to the sauce and bon appetite!
