I’m back from Sunburst Tomato Farm in Momeyer, North Carolina. What a great trip! While I was learning about growing tomatoes in the winter, I was thinking about making a homemade pizza recipe to add to my cooking classes. But then, I thought, what does the local tomato farmer like to make with his fresh tomatoes?

Tim Bass of Sunburst Tomatoes says he prefers the raw, natural flavor of his tomatoes in a Tomato Sandwich, “two slices of bread, some mayonnaise and a slice of tomato” is his favorite homemade tomato recipe.

Well, that might suit the tomato farmer, but Tim sent me home with a sack full of quality tomatoes and all I can think about is a homemade pizza recipe that I simply call “tomato pie”. I don’t use pizza sauce. No, instead, I use sliced tomatoes. But I’m jumping ahead in this cooking class, let’s start with the crust.

This is my tried and true basic homemade pizza dough recipe: 18 ounces flour, 10 ounces water, 2 teaspoons of yeast. This will be the basis for the pizza crust that will then complete the standard 10 step yeast dough process.

You want to take time mixing the ingredients together, because you want for gluten to develop in the process. Moisture and agitation develop gluten which will help to develop that wonderful chewy crust that we’ve all come to expect and love in our pizza. After the pizza dough is mixed, you need to allow it to ferment until it doubles in size. At this point, knock all of the air out of the dough and allow it to rise again. Now, the homemade pizza crust starts to take form. Using a rolling pin and a thick marble* slab, flatten the dough to create the pizza crust.

*(Marble is a wonderful medium to use when you are dealing with dough or pastry because the thickness of the slab helps to keep the temperature consistently cool to create a better product.)

I like to use a pizza peel to get my pizza in the oven. I put a little bit of corn meal on the peel to help with the flavor as well as making it easier to get the pizza off of the peel when I’m ready to put it into the oven. Once the homemade pizza crust is on the peel, I like to go around the edge of the pizza crust folding over the edge to form the outer edge of the pizza. Also, brush on a little olive oil to ensure a nice brown crust and I like to add some freshly cut garlic as well.

Instead of a tomato sauce recipe, thinly sliced tomatoes will form the foundation of the tomato pie recipe, and this homemade pizza goes in the oven, on top of heated stones.

What? Only tomatoes on the homemade pizza?
No, I want more ingredients, but the tomatoes take longer to cook! Only after the tomatoes have cooked is the cheese and basil added. Basil is too delicate to allow it to bake for the same time as the tomatoes, so it’s added at the very end in a fancy French knife skill called “chiffonade”.

The best homemade pizza recipe is the one that uses the freshest, best ingredients, like tomatoes from your local farmer. The homemade pizza that you create will have much more flavor, nutrition and sense of pride that you made it. Not only that, it will be better for you as well. Pizza Hut Pan Pizza Recipe Ingredients:

1 1/3 cups Warm water (105◦F)

1/4 cup Non−fat dry milk

1/2 teaspoon of salt

4 cups Flour

1 Tablespoon of Sugar

1 pk. Dry yeast

2 Tbls. Vegetable oil (for dough)

9 Oz. Vegetable oil (3 oz. per pan)

Butter flavored Pam

 

Put yeast, sugar, salt, and dry milk in a large (2 qt.) bowl. Add water and stir to

mix well.

 

Allow to sit for two minutes.

 

Add oil and stir again.

 

Add flour and stir until dough forms and flour is absorbed.

 

Turn out on to a flat surface and knead for about 10 minutes.

 

Divide dough into three balls.

 

In three 9″ cake pans, put 3 Oz. of oil in each making sure it is spread evenly.

 

Using a rolling pin, roll out each dough ball to about a 9″ circle. Place in

cake pans.

 

Spray the outer edge of dough with Pam. Cover with a plate. Place in warm

area and allow to rise for 1 to 1 1/2 hours.

 

Pizza Hut Pan Pizza Recipe Pizza Sauce:

 

1 -8 Ounce Can Tomato Sauce

1 Teaspoon Dry Oregano

1/2 Teaspoon Marjoram

1/2 Teaspoon Dry Basil

1/2 Teaspoon Garlic salt

 

Pizza Hut Pan Pizza Recipe Pizza Sauce Cooking Instructions:

 

Combine and let sit for 1 hour.

 

Pizza Hut Pan Pizza Recipe Cooking Instructions:

 

For Each Nine Inch Pizza:

 

1. Preheat oven to 475F

 

2. Spoon 1/3 cup sauce on dough and spread to within 1″ of edge.

 

3. Distribute 1 1/2 Oz. shredded mozzarella cheese on sauce.

 

4. Place toppings of your choice in this order:

 

Pepperoni or Ham

Vegetables

Meats (cooked ground sausage or beef)

 

5. Top with 3 Oz. mozzarella cheese

 

6. Cook until cheese is bubbling and outer crust is brown.

 

7. Cut in six slices.

How Did Pizza Come Into our Social Life?

Trying to trace the history of the first pizza is a surprisingly controversial subject. Some claim that this popular food is based on early unleavened breads served in the early centuries in Rome. Others trace a connection from modern pizza back to the pita breads of Greece.

It is fairly well established that the first pizza as we know it today was created by a man named Raffaele Esposito from Naples, Italy. Esposito’s creation was designed to honor the visit of Queen Margherita to Naples in 1889, and he decorated it with the colors of the Italian flag, using white cheese, green basil, and red tomatoes (tomatoes, which had arrived from the west about 60 years earlier, were originally thought to be poisonous, but by Esposito’s time they were already embraced by Italian cuisine).

As the years passed and the turn of the century came about, Italian immigrants brought this recipe with them to America. The first pizzeria was opened in America in 1905. It remained popular almost exclusively among immigrants until the end of World War II, when American soldiers returned to their home soil and brought back a love of the pizza they had discovered overseas. With that, the pizza boom in America began and this food became a mainstream meal instead of an underground Italian snack.

The concentration of Italian immigrants in New York in those olden days explains the fact that many people feel you must visit New York to get true pizzeria-style pizza. It is where the pizza got its American start, after all. And nobody who has experienced New York style pizza can disagree. New York is famous for its pizzerias, where a true slice of pizza consists of a thin, wide crust loaded with plenty of toppings and marinara and smothered in heady Italian seasonings. A side of garlic bread and some heady pastas and tortellinis usually round out the menu. Pizzerias in New York are not for the faint of heart.

In the early 1940s, the city of Chicago, IL took pizza in a different direction. It is believed that the first pizzeria in Chicago was Pizzeria Uno, opened in 1943 by Ike Sewell. Sewell’s pizza creation was a new twist on the old New York standard. He created what is known today as deep-dish pizza, where the pizza is sunk low into a deeper pan, and the crust is allowed to rise in thick bubbles around the edges. People flocked to Sewell’s pizzeria, and a whole new way of looking at this favorite food was born.

To this day, you can find yourself in some heated debates if you argue with a New Yorker or a Chicagoan about what constitutes authentic pizzeria-style pizza. But whatever crust style you choose, pizza is a unique food with a foggy past and a definite appeal that has lasted through many incarnations.

So you are lucky enough to find yourself in New York or Chicago, or any city for that matter that has a true pizzeria, complete with checked tablecloths and plenty of garlic on the menu, indulge yourself in an old tradition and order a slice. After all, it is tradition.

Bar-B-Que history and style

Barbeque, in the southern and Midwest parts of the United States, consists of slow-cooking meat over indirect heat. Chicken, beef, pork, sausage, ham, and ribs can all be barbequed – even mutton is sometimes barbequed, at least in Kentucky. With so many ways to make so many dishes, the perfect way to make barbequed meat can be a regional “bone” of contention.

In Memphis, Tennessee, barbeque is almost a religion. Barbeque ribs – most often pork, are cooked for long hours, until the meat is so tender that it is ready to fall off the bone. The city bills itself as the pork barbeque capital of the world, and has over one hundred barbeque restraints to back up that claim, many of whom participate in the annual pork cook off that is listen the Guinness Book of World Records as the largest pork barbeque contest anywhere.

The contest, part of the celebration called “Memphis in May”, draws some 90,000 cooks and spectators. Competitors come from fifty smaller cook offs sponsored by the main contest. It even runs a series of training seminars for potential barbeque judges. Good barbeque, they say, is all about being tender, without being too mushy, and being smoky, without being overpowering.

Ribs commonly come “wet,” that is, with barbeque sauce of some kind, usually mild and sweet in Memphis and basted on before and after cooking, or “dry,” with a dry rub of herbs and spices that is applied during or right after cooking. Regardless of which style is favored, the taste of the meat should come through – this is what separates good barbeque from something lathered with barbeque sauce and put in the oven for a few hours.

In Missouri, there is not one, but two predominant styles of barbeque, both of which favor beef, which is not surprising given the history of both Kansas City and St. Louis as “cattle towns.” They share a tomato-based sauce that is added after cooking, and can be replicated by mixing ketchup, brown sugar, mustard, and Worcestershire sauce. Interestingly, Missouri’s Ozarks are the source of almost half of the charcoal briquettes produced in the United States.

Kansas City, like Memphis, has a large number of barbeque restaurants and hosts several annual competitions. However, it is particularly famous for its sauces, which are thick, rich, tangy, and spicy. The sauce is basted on during the last few moments of cooking, and more can be added thereafter. Dry rub, too, is common on Kansas City style barbeque.

In St. Louis style barbeque, ribs are the flagship dish. These famous spare ribs are a rack of ribs with the chine bone and brisket bone removed. They are cooked with a sauce that is less vinegary, tangier and thinner than its cross-state equivalent, closer, in fact, to that served in Memphis.

Whether sweet or spicy, dry or wet, slow cooked or grilled over an open flame, barbeque is one of the most diverse of all American foods, and one to which many cities lay claim. Each has its own unique character, so get some bread and crackers, or some cole slaw, or even beans, (all traditional barbeque side dishes) and give them a try.

–Pizza Hut Cavatini– 

1 large green pepper, diced

1 large onion, diced

2 oz. (1/2 stick) margarine

1 teas. garlic powder

1 lb. assorted pasta (wheels, shells, spirals, ziti)

1/2 lb. pepperoni – sliced thin – then cut in half.

8 oz. mozarella cheese (shredded)

1/2 lb. hamburger (browned)

1/2 lb. italian sausage (browned)

1 – 16 oz. jar meat flavored Prego sauce

Melt margarine over medium high heat in a skillet. Add onions, peppers, and garlic powder. Saute for about 4 minutes. Meanwhile, cook pasta according to box directions.

Heat sauce and combine with cooked hamburger and cooked sausage. Use cooking spray to lightly grease an 11 X 13 casserole dish.

Place 1/2 of the cooked pasta in the dish, followed by 1/2 the vegetables, 1/2 of the pepperoni, and 1/2 sauce. Repeat another layer. Spread mozzarella cheese over top.

Bake at 350 degrees for about 45 minutes or until cheese is melted.

 

–Pizza Hut Creamy Italian Dressing–

2 teaspoons dried oregano

2 teaspoons dried basil

1/2 teaspoon dried thyme

1/2 teaspoon dried rosemary

1 teaspoon salt

1/2 teaspoon coarsely ground black pepper

1/4 cup red wine vinegar

1 tablespoon fresh lemon juice

1/4 cup mayonnaise

3/4 cup extra-virgin olive oil

1/3 cup freshly grated Parmesan cheese

Crumble the oregano, basil, thyme and rosemary into a medium bowl. Stir in the salt, pepper, vinegar and lemon juice.

Whisk in the mayonnaise and then the gradually whisk in the olive oil. Stir in the Parmesan cheese. Transfer to a jar with a tight-fitting lid and store in the refrigerator. Shake well before using.

You can use this excellent Italian Dressing on salads, all kinds of items. They’ll love it!

 

And, of course, their famous…

 –Pizza Hut Dessert Pizza–

Pizza Crust:

1 cup warm (105F) water

2 cups flour

1-1/2 tablespoons vegetable oil

3/4 cup cake flour

1 teaspoon salt

1/4 teaspoon active dry yeast

 

- Fruit Filling:

1 – 21 oz. can pie filling (cherry, blueberry, or apple)

 

- Crumb Topping:

1/2 cup flour

1/2 cup brown sugar

1/2 cup quick oats

1/2 cup firm butter or margarine

1 teaspoon cinnamon

 

- Vanilla Glaze:

2 cups powdered sugar

3 tablespoon Milk

1 tablespoon Melted margarine or butter

1 teaspoon vanilla

Combine yeast and warm water and let proof for 3 minutes. Add to other crust ingredients in a large bowl and knead for 10 minutes.

Cover with plastic wrap, and allow to rise for about 12 hours. Preheat oven to 500F. Roll the dough on a floured surface until it is about the diameter for your 16 inch pizza pan. Place in pan and form the dough to the edge.

Brush with vegetable oil and prick with fork. Prebake for 3 minutes. Remove from the oven and spread with pie filling. Mix crumb topping ingredients with a fork or pastry blender.

Spoon over pie filling. Return pizza to the oven and continue to bake for 10-15 minutes or until crust is light golden brown. Remove and drizzle with vanilla glaze.
